When I was a kid my whole family got together for holidays and we always knew who would bring what. One aunt always made green jello, another made her special potatoes. I was a picky kid so I missed out on years of good eating, but I’m making up for it now.
Cream Cheese Garlic Potatoes
I highly recommend organic food items whenever possible, but you may use what is readily available to you.

Ingredients
- 8-10 cups boiled potatoes
- 1 8 oz. pkg cream cheese
- ½ cup sour cream
- 1 clove garlic, pressed
- 1 tsp. salt
- 1 cube real butter
- Paprika, chives (for decorating)
Instructions
- Wash, peel, cube, and boil potatoes in salted water until they break apart when poked with a fork.. Drain.
- Meanwhile, in a bowl, add cream cheese, sour cream, garlic and butter until well blended.
- Add potatoes to cheese/cream mixture. Mix until well blended.
- Spray a 2 qt. casserole dish with cooking spray and spoon in the potato mixture. Sprinkle top with paprika, chives and a few pats of butter.
- Bake at 350 degrees for 20-25 minutes
