Ingredients
- Cornmeal Crust:
- 5 c. cold water
- 1 tsp. chili powder
- 2 tsp. salt
- 2½ cups of cornmeal
- Filling:
- 2 Tbsp. shortening
- 1 lb. ground beef
- 1 c. chopped green pepper
- 1 jalapeno
- 1 c. chopped onion
- ½ c. chopped celery
- 1 c. sliced ripe olives
- 2 c. tomatoes
- 1 c. cream style corn
- 1 clove crushed garlic
- 1 Tbsp chili powder
- 2 tsp. salt
Instructions
- Cornmeal Crust:
- Combine water, 1 tsp. chili powder, salt, and cornmeal in a saucepan over medium heat.
- Cook until thickened (about 15 minutes), stirring frequently.
- Line the bottom and sides of a 2 quart baking dish with ⅔ of corn mixture.
- Filling:
- Lightly brown:
- Shortening, ground beef, onion, green pepper, jalapeno, chopped celery, and olives.
- Add:
- Tomatoes, corn, garlic, 1 Tbsp. chili powder and salt.
- Simmer for 20 minutes,
- Pour over crust in baking dish.
- Top with remaining crust.
- Sprinkle with remaining cheese.
- Bake at 350 for 45 minutes.
