- 2 lbs. watermelon rind
- 2 quts. sugar
- 2 quts. water
- 1 lemon, sliced thin
- juice of half lemon
- 6 to 8 ginger root
- 1 c. white Karo Syrup
- Cook sugar, Karo syrup and watermelon until about done.
- Add lemon juice
- Tie lemon rind and ginger root in bag
- Cook until transparent.
